Homemade Cocktails and Iced Tea

Green tea, white tea, and black tea are popular ingredients in non-alcoholic cocktail recipes, also known as mocktails. From the office to happy hour to afternoon tea, any occasion is a good one to try these creations, where each ingredient has been chosen to add depth and a lingering finish. Of course, feel free to adjust them to suit your tastes or whatever you’re in the mood for!

Here are 7 recipes made with organic tea or herbal tea, tested and approved by the experts at Les Jardins de Gaïa. Whether spicy, spring-inspired, festive, exotic, or distinctly summery, you’ll find THE organic non-alcoholic cocktail that’s just right for you!

Spicy Summer (prepare the day before)

  • In a 1-liter pitcher, dice one organic apple and one organic orange. Add 75 cl of cold water, 9 g (5 teaspoons) of Summer Vibration tea in a tea strainer, and 1 teaspoon of Espelette pepper (or more, depending on your taste!)
  • Cover and let sit at room temperature for 24 hours, allowing the fruit to macerate like sangria, then refrigerate.
  • Remove the tea bag, pour in 25 cl of chilled organic red fruit juice, and stir.
  • Serve in tall glasses garnished with half a slice of orange and ice cubes.

Spring Delight

  • Steep 2 teaspoons of Rêve de femme white tea in 15 cl of simmering water (80°C). Let steep for 4–5 minutes, then strain. Pour the resulting infusion into a large glass filled with ice cubes.
  • In a shaker, mix 5 cl of guava juice, 3 cl of lychee juice, a dash of agave syrup, and 1 tablespoon of lemon juice. Pour in the chilled Rêve de femme tea and a teaspoon of cardamom, then pour back into the glass.
  • Whip a few centiliters of soy milk with guava juice to make a foam.
  • Gently spoon the foam onto the white tea cocktail.

Matcha Tutti Frutti

  • Place 2 level teaspoons of Matcha Tradition in a matcha bowl. Add 20 ml of water and 20 ml of soy milk. Stir the matcha, then whisk vigorously in an “M” or “W” motion (not in a circular motion) until a nice foam forms.
  • In a cup, add the ice cubes, pour in 210 ml of exotic fruit juice, then pour the matcha on top. Two distinct layers will form (the yellow nectar at the bottom and the green matcha on top).

Piña Fiesta

  • In a blender, combine 130 ml of cold Bollywood Flush tea with 80 ml of pineapple juice, 40 ml of coconut milk, and 2 ice cubes for about 30 seconds until smooth and a nice light foam forms
  • Pour the mixture into a glass
  • Place half a pineapple slice on the rim of the glass as a garnish and sprinkle with sugar.

Matcha Latte

  • In a blender or food processor, combine 1 level teaspoon of matcha, 150 ml of rice milk, 30 ml of coconut milk, 3 ice cubes, and agave syrup (to taste).
  • Pour into a glass and enjoy!

La Vie en Rose

A zero-waste, simple, and delicious infusion!

  • Steep about 10 g (2 tablespoons, or about 30 buds) of rose buds in a 1-liter pitcher. To best release the rose aromas, use a “maceration” method: the night before, steep the rose buds at room temperature. You can also steep them in the fridge for at least 20 hours.
  • The next day, remove the rosebuds used for the infusion (you can remove any bleached petals if necessary) and place them in an ice cube tray, add water, and freeze.
  • When serving, pour the infusion into your glasses, add ice cubes, and top with the rosebud ice cubes for decoration. In addition to their aesthetic appeal, they’ll enhance your cold drink with a delicate, naturally sweet flavor!

The Taj Mahal

  • The day before, steep 10 g (about 4 level teaspoons) of our Taj Mahal black tea flavoured with blackberry & vanilla in a 1-liter pitcher
  • The next day, in a shaker, pour 240 ml of cold Taj Mahal tea, add a few ice cubes, 4–5 raspberries, crushed mint, agave syrup (to taste), and 10 ml of lemon juice
  • Shake until frothy, serve, and enjoy this cocktail with a touch of India!

Cold tea or instant cold infusion: our tip

Instant iced version: you can also make your iced tea from a hot infusion. Use the same amount of tea, but with half the water, then pour the still-hot infusion into a pitcher three-quarters full of ice cubes to cool the mixture immediately.
