
Italian meatballs with rubs recipe
How to cook barbecue rubs? This dry marinade made from organic sugar, salt, herbs and spices is delicious just sprinkled on your piece of meat before cooking, as in the classic recipe. To vary the pleasures, we've come up with a recipe for Italian-style pork meatballs that we're sure you'll love!
Like the whole "My French Rubs" range, the Perfect Pork spice blend can be used on the barbecue, a la plancha, in the oven or even in a frying pan. But it's true that the smoky taste of wood-fired stewing adds a real touch of originality, revealing a meat that can sometimes seem banal.

Italian-style pork meatballs with tomato and basil sauce, the recipe for tasty meatballs
Ingredients for 4 servings :
- 600 g minced pork
- 2 eggs
- 1 onion
- 40 g Parmesan cheese
- 40 g breadcrumbs
- 4 tablespoons olive oil
- 2 tablespoons Perfect pork barbecue spices!
Ingredients for the tomato and basil sauce :
- 4 large, ripe tomatoes
- 1 onion
- 2 cloves garlic
- 2 tablespoons olive oil
- 3 sprigs fresh basil
- 25 cl water
- Salt and pepper


To make this recipe:
- Prepare the sauce by chopping the onion and dicing the tomatoes. Sauté the onion in olive oil, then add the diced tomatoes and water.
- As soon as it starts to boil, turn down the heat and add the chopped basil leaves. Simmer for 30 minutes, seasoning at the end.
- Make the meatball filling by adding the minced pork, onion, eggs, Parmesan, breadcrumbs and olive oil.
- Shape into dumplings weighing around 50 g each, to make 4 per person. Sprinkle them with the Perfect Pork spice mix just before baking for about 20 minutes. Turn regularly.
- Serve with pasta, rice or grilled vegetables.
If your stuffing seems too compact, add a drizzle of olive oil to the mixture, or if, on the contrary, it seems too moist, add a little breadcrumbs.
If you have a barbecue with a lid, you can try smoking the meatballs with wood shavings!
