Recipe for grilled eggplants with goat's cheese and rubs spices
With these grilled eggplants with fresh goat's cheese and Sunny Veggie barbecue spices, we take you on a journey with bohemian accents (invigorating notes of galanga and ginger) and Garrigue scents (basil, thyme, savory, sage). A touch of goat's cheese adds a gourmet touch and creaminess to this recipe. Oven, plancha or barbecue, it's up to you!

Ingredients for 4 people :
- 4 large eggplants
- 4 tomatoes
- 400 g fresh goat's cheese
- 2 tablespoons olive oil
- 2 tablespoons Sunny veggie barbecue spices
- 1 clove garlic
To make this recipe
- Wash and slice eggplants lengthwise.
- Drizzle them with the olive oil and place them on the grill, flesh side down, until nicely marked (about 10 minutes).
- Arrange them on a baking sheet, flesh side up, with the chopped garlic. Sprinkle with Sunny veggie barbecue spices.
- Place the chunks of fresh goat's cheese and diced tomatoes on top of the eggplants.
- Place the garnished eggplants back on the barbecue and cook for a further 10 minutes.
- You can serve the grilled eggplants with a few arugula leaves on top.
Another gourmet option with your barbecue rubs
You can also grill slices of zucchini and eggplant (approx. 1 cm thick). Once you've obtained the typical grill markings, sprinkle them with Sunny veggie barbecue spices. Place them in a dish containing oil and a clove of crushed garlic.
Your antipasti is ready - enjoy! It can be prepared and stored in the refrigerator for up to 3 days. And for a cocktail party, serve on slices of farmhouse or seed bread.
