Rich in coumarin, a naturally aromatic substance with the scent of freshly cut hay that has delighted perfumers since the 19th century, tonka bean brings an inimitable roundness and deliciousness to sweet and savory dishes.
Always used sparingly, like nutmeg, our organic tonka bean will work wonders with chocolate in all its forms, or infused in creams. Purées, béchamel, court-bouillon... try it in a savoury version too!
