Sometimes called "turmeric", turmeric is a rhizome, a cousin of ginger, dried and ground to a powder. An excellent colorant, turmeric's mild flavor will brighten up your spice blends, starches or vegetables.
The allopey variety chosen for our turmeric is the richest in curcumin, with antioxidant, aromatic and coloring properties. Terra Madre turmeric powder comes from fair trade associations of small-scale producers in India and Sri Lanka.

Lebanese turmeric cake - Stouf
Ingredients for 6 people
- 250 g fine semolina
- 1 glass flour
- 1 teaspoon baking soda
- 2 tablespoons Terra Madre turmeric
- 2 tablespoons orange blossom water (or rose water)
- 1 glass milk
- 1 handful pine nuts
- 2 glasses sugar
- 1 glass vegetable oil
Preheat oven to 200°C. Grease a tart tin. Mix the semolina, flour, bicarbonate, sugar, fragrant water and turmeric in a bowl. Make a well and pour in the oil and milk. Mix well to obtain a homogeneous paste. Pour the mixture into the tart tin and decorate with the pine nuts. Bake for 20 minutes.
