
A fragrant blend of spices
A typical blend of Indian spices, curry is a real invitation to travel. It can be mixed with vegetables, rice, meat or fish. Typical of South India, this Madras curry will spice up Indian dishes or pan-fried vegetables. The fair-trade spices (black pepper, turmeric, ginger) in this blend are sourced from associations of small-scale producers in India and Sri Lanka.

Suggestions
Classic: curry vegetables, rice, meat or fish. Sauté for a few moments in hot oil before adding ingredients.

Potato & cauliflower curry - Aloo Gobi
Ingredients for 6 people
- 4 potatoes
- 1 cauliflower
- 1 large onion
- 3 tablespoons Terra Madre Madras curry powder
- 1 tablespoon Terra Madre Garam Masala
- olive oil
- chopped fresh coriander
In a sauté pan, brown the spices in the oil, then add the minced onion. Add the chopped potatoes and cauliflower. Cook over low heat for 20 minutes, until vegetables are tender. Serve with chopped fresh coriander.
