The farming moment

A distant cousin of broom, rooibos is particularly suited to the hot, dry summers and wet winters of the Cederberg massif.

It grows at altitudes of between 450 and 900 meters in acidic, sandy soil rich in phosphate and potassium. The roots grow up to three meters underground, where they draw the water needed to feed the shrub.

The plant has hard-shelled seeds. In the wild, ants scatter the seeds, which germinate naturally thanks to the frequent bush fires in the fynbos. Cultivation involves collecting the seeds and scarifying them to initiate germination.

Tea and food pairings

For a successful pairing, rooibos should be overdosed or over-infused to bring out its natural woody and vanilla flavours with the food. As a result, it's a perfect match for "classic" breakfasts and snacks: toast, pastries, cakes or madeleines, but also for most desserts, making it a perfect candidate for a "café gourmand" caffeine-free version.
