Chicken with ginger caramel
Ingredients for 4
- 4 chicken breasts or turkey fillets
- 2 tablespoons liquid acacia honey
- 1 tablespoon Terra Madre ginger powder
- 1 teaspoon Terra Madre Cinq parfums
- 1 tablespoon Terra Madre green pepper in brine
- 1 tablespoon soy sauce
- 2 cloves garlic
- 2 tablespoons olive oil
- a little fresh ginger (optional)
- salt and pepper
Press the garlic and mix with the oil, soy sauce, all the spices (except the green pepper) and honey. Coat meat with this mixture and marinate for at least 1 hour. Brown the meat in a casserole dish with a little hot oil. Cover and simmer over a low heat for 30 minutes, adding a little water if the meat caramelizes too quickly. At the end of cooking, add green pepper and, optionally, grated fresh ginger. Add salt and pepper to taste. Serve with steamed vegetables or basmati rice.
