Rillettes of pink radish with fromage frais and pink berries, a recipe that combines vegetables, cheese and spices..

Ingredients for 4 people :

  • 2 bunches pink radishes
  • 300 g fromage frais
  • 1 bunch fresh chives
  • 1 dozen pink berries
  • 1 drizzle of olive oil
  • Salt
  • Pepper

Optional ingredients:

Bread, crackers, blinis or rice cakes for the toasts. You can use wholemeal, seeded or gluten-free bread!

To make this recipe as simple as it is delicious:

  1. Wash your radishes and remove the tops. Chop the radishes and pour into a colander to remove as much water as possible.
  2. Add the fromage frais and mix.
  3. Rinse and chop the chives. Crush the pink berries. Add to the mixture and season with a drizzle of olive oil. Season with salt and pepper.
  4. Spread on bread. Decorate with chives and whole pink berries. For radish lovers, you can also add pink slices to your tartine!

Anti-waste tip

Don't throw away your radish tops, especially if they come from your garden! They're delicious in pesto or velouté, hot or cold.

Gourmet pairings

On toast, they go perfectly with a tomato, mozzarella and basil salad. The spiciness of pink berries contrasts with the sweet aromas of balsamic vinegar.

Pink berries, a little-known fruit
