Cloves are the flower buds of the clove tree Syzygium aromaticum, picked before flowering and dried in the sun.

Terra Madre's fair trade cloves come from the Sahyadri association in the mountains of Kerala in southern India, and from the SOFA gardens in Sri Lanka, where producers grow spices and tea.
