This colorful dish is sure to tantalize your taste buds, and is the perfect accompaniment to all types of grilled meats, whether vegetarian (tofu, soy...) or meat-based (beef, lamb, chicken, pork, fish...)!

Terra Madre Vegetable Tian with aromatic herbs, the recipe for a dish full of sunshine
Ingredients for 2 people :
- 1 eggplant
- 1 zucchini
- 2 tomatoes
- 130 g feta cheese
- 1 teaspoon salt and pepper
- 2 tablespoons olive oil
- Herbs de Provence to taste
- Thyme to taste
- Rosemary to taste
To make this recipe
- Preheat oven to 180°C. Cut the vegetables in half lengthwise. Cut into thin slices of equal thickness.
- Arrange in a gratin dish, alternating eggplant, zucchini and tomato. Fill the dish.
- Crumble the feta cheese over the vegetables.
- Drizzle with olive oil, then add the aromatic herbs. Season with salt and pepper.
- Place in the oven, cook for 1 h at 180°C and enjoy.

Tip for vegans
This recipe can be made without cheese. You can also replace the feta with goat's cheese, Parmesan, mozzarella, ricotta..
Seasoning tip
You can spice up the dish by adding Espelette pepper, our ratatouille blend, or our rubs Sunny Veggie spice blend, which will caramelize in the oven.
