
Recipe for beef tagliata with rubs spices

Beef tagliata with rubs spices, the gourmet recipe to delight your guests
Ingredients for 4 people :
- 1 nice piece of beef (entrecôte, prime rib), approx. 1.2 kg
- 2 tablespoons Ultimate beef barbecue spices
- Terra Madre IGP Kampot black pepper
- Arugula
- 200 g Parmesan shavings
- 2 tomatoes, diced
- 2 roasted peppers
- 20 g capers
- Pine nuts
- Balsamic vinegar
- Olive oil
To make this recipe:
- Sprinkle Ultimate beef barbecue spices over the meat, cover and store at room temperature for 1 hour.
- Before cooking, drizzle with olive oil to prevent the meat from sticking to the grill.
- Cook the meat for 15 to 20 minutes for rare, then cover and leave to rest for a few minutes.
- Arrange the arugula, diced tomatoes and grilled bell pepper strips on a plank.
- Cut into strips and arrange the meat on top of the salad.
- Finish with a sprinkling of Parmesan shavings, Kampot black pepper, capers and pine nuts.
- Drizzle with balsamic vinegar and olive oil, and enjoy.

If you have a probe, don't hesitate to use it to check the doneness of your beef (rare: 56°C, rosé: 63°C, medium: 71°C, well done: 77°C)


Tips for choosing your piece of beef
For a tagliata, the meat must be very tender, so it's perfectly possible to serve it at room temperature. If you're barbecuing, we recommend entrecôte or prime rib, but if you're preparing it for the evening and cooking it a la plancha or in a frying pan, don't hesitate to use filet or pavé.
