A highly aromatic blend from northern India, Garam Masala goes perfectly with meats or pan-fried vegetables. Add at the beginning of cooking to develop all the flavors. The spices in this blend come from associations of small-scale producers in India and Sri Lanka.

Potato & cauliflower curry - Aloo Gobi
Ingredients for 6 people
- 4 potatoes
- 1 cauliflower
- 1 large onion
- 3 tablespoons Terra Madre Strong Madras Curry
- 1 tablespoon Terra Madre Garam Masala
- olive oil
- chopped fresh coriander
In a sauté pan, brown the spices in the oil, then add the minced onion. Add the chopped potatoes and cauliflower. Cook over low heat for 20 minutes, until vegetables are tender. Serve with chopped fresh coriander.
