Vegetable and spice soup
Ingredients for 6 servings
- 300 g carrots
- 200 g potatoes
- 300 g zucchini
- 2 L vegetable stock
- 1 large onion
- 1 tbsp Terra Madre coriander powder
- 1 teaspoon Terra Madre ginger powder
- 1 tsp Terra Madre cumin powder
- olive oil
- 1 small bunch fresh coriander
- salt and pepper
Heat the spices in the oil. Brown the chopped onion. Add the chopped vegetables and half the fresh coriander. Fry for a few minutes. Add the stock. Simmer for 25 to 30 minutes. Blend. Add salt and pepper to taste. Serve with fresh coriander on top.
