The sunny fragrance of this rooibos is ideal for pairing with yellow fruit cakes for a tone-on-tone effect: a peach-apricot crumble, for example, or an apple turnover. Its tangy flavours can also be combined with crème brûlée, vanilla éclair or millefeuille to counterbalance its extreme sweetness. Hot or cold, this infusion can be used for a "gourmet tea" in a theine-free version.
