Crème brûlée with vanilla
Ingredients for 6 people
- 2 Terra Madre vanilla beans
- 22 cl whole milk
- 37 cl single cream (30% fat)
- 9 eggs
- 110 g caster sugar
- 60 g brown sugar
Preheat oven to 140°C (gas mark 5). Split vanilla pods lengthwise into 2. Remove seeds with the tip of a knife. Heat the milk and cream with the empty vanilla pods. Strain. Whisk eggs with caster sugar. Add vanilla seeds. Gradually pour in milk and cream, stirring constantly. Strain through a fine sieve. Divide the cream between egg dishes. Place on a baking sheet. Pour water into the baking tray halfway up the egg dishes to cook in a bain-marie. Place in the oven and bake for 20-25 minutes. Remove from oven, cool and set aside in a cool place. Before serving, sprinkle the cream with brown sugar. Burn the surface with a blowtorch.
