Iranian omelette with herbs - Cucu Sabzi

Ingredients for 6 people

2 tablespoons Terra Madre parsley
2 tablespoons Terra Madre bouquet garni
1 leek, thinly sliced
6 eggs
1 tablespoon Terra Madre turmeric
1 teaspoon Terra Madre coriander powder
1 teaspoon Terra Madre black pepper powder
1 handful chopped walnuts
3 cloves garlic
3 tablespoons vegetable oil

Mince the leek, add the parsley and bouquet garni, then chop. Beat the eggs in a bowl, adding the salt, pepper, turmeric and chopped walnuts, then the herbs and mix well. Heat the oil in a frying pan and pour in the egg and herb mixture. Turn the omelette over when the first side is set (1 min.). Slide the omelet onto a plate and serve hot or cold.
