Iranian omelette with herbs - Cucu Sabzi
Ingredients for 6 people
- 2 tablespoons Terra Madre parsley
- 2 tablespoons Terra Madre bouquet garni
- 1 leek, thinly sliced
- 6 eggs
- 1 tablespoon Terra Madre turmeric
- 1 teaspoon Terra Madre coriander powder
- 1 teaspoon Terra Madre black pepper powder
- 1 handful chopped walnuts
- 3 cloves garlic
- 3 tablespoons vegetable oil
Mince the leek, add the parsley and bouquet garni, then chop. Beat the eggs in a bowl, adding the salt, pepper, turmeric and chopped walnuts, then the herbs and mix well. Heat the oil in a frying pan and pour in the egg and herb mixture. Turn the omelette over when the first side is set (1 min.). Slide the omelet onto a plate and serve hot or cold.
