Tea preparation tips
A unique white tea
This sublime white tea from northern Vietnam is made from the buds of a rare species of camellia, Camellia taliensis. Delicately plucked, these "dragon's scaled tails" produce a dense liquor that is spicy, honeyed, fruity and floral. An enchantment for the palate!
Organic farming
We have always offered organically grown teas and herbal teas, and used natural, organic flavours. We go even further, demanding that our suppliers use certified organic flavor carriers and solvents. Certified since 1994.
Fair trade
A WFTO (World Fair Trade Organization) certified member, Les Jardins de Gaïa has been committed to fair trade since its creation: from the tea leaf to the cup, all our practices meet fair trade requirements. To find out more: www.wfto.com.
Grand Cru Tea
Because we have always chosen teas of excellence produced by long-standing partners, we have a few rarities that gourmets will appreciate. Harvested green teas from Japan, black teas from Darjeeling, spring teas from China, vintage pu'er or carefully hand-braided teas, organic teas of incomparable finesse for memorable tastings.
Plain tea
White, green, black and dark teas from China, India, Japan and elsewhere are all varieties from the same plant: the tea plant. Once plucked, the leaf is processed in different ways, undergoing numerous transformations. Depending on the terroir, the fineness of the leaf and the way it is processed, the result is an unlimited palette of tastes and vintages.
This sublime white tea produced in northern Vietnam is unique in its kind: it's not made from leaves like conventional tea, but from the young buds of a rare species of tea plant: Camellia Taliensis.
These precious buds are harvested at an altitude of between 2,500 and 2,800 m in the province of Hà Giang, close to the famous Chinese tea-growing province of Yunnan. It is to protect themselves from the cold of this mountainous region that the buds form their beautiful, characteristic scales, giving this exceptional tea its Vietnamese name Duôi Rông (dragon scale).
To reach these tea bushes, located in a particularly wild environment far from local human communities, the pluckers belonging to the Zao ethnic group have to walk for several hours.
The branch buds, with their purplish highlights and high anthocyanin (antioxidant) content, are carefully picked one by one by hand from 150 to 200-year-old tea bushes, and undergo very little further processing. They are simply spread out on mats to dry naturally in the sun for two days, then quickly put into the kiln for final drying before being packed.
Tea and food pairings
This delicate white tea goes well with mild, sweet and savory dishes such as steamed vegetables, spring rolls or vanilla rice pudding.
