The spice with warm, aniseed flavours
Did you know that the word "caraway" comes from the Arabic karâwiyâ, meaning "sugar root", and that the first traces of this spice date back to 5000 BC? Pharaohs used it to chase away evil spirits and, in the Middle Ages, it was attributed with virtues for love potions!
Today, we know that caraway seeds, from the same family as cumin (Apiaceae), have many other properties (stimulating, digestive, galactogenic and antispasmodic, for example). With its citrusy, aniseed-like aromas and refreshing, slightly bitter flavors, caraway is a well-known Alsatian accompaniment to Munster cheese. Whole caraway seeds add a subtle fragrance that's perfect for dishes in sauce or crème brûlée!
Use:
As an infusion, one teaspoon per cup infused for 5 to 10 minutes at 95°C. For babies, do not exceed 100 ml of infusion per day.
Dry-roast caraway seeds on a frying pan over a high heat to bring out their full fragrance!
Sprinkle on cheese or in simmered dishes.
