
Recipe for winter apple and sugar tart amandine
Timeless, apple tart is one of France's 10 favorite desserts, and a sure-fire way to please your guests. Everyone adds their own personal touch, but what about you?
In this version of Tarte amandine aux pommes et au Sucre d'hiver Terra Madre, we add a rustic touch with Siramamy, organic whole cane sugar from Madagascar, combined with the bewitching duo of star anise and bourbon vanilla. Round notes of spicy caramel with a hint of aniseed, to be tried without delay!
Baking time: 35 minutes at 180°C

Tarte amandine with apples and winter sugar, the recipe for a dessert everyone will love
Ingredients for 6 people :
- 1 puff pastry
- 4 large apples
- 50 g caster sugar
- 50 g Terra Madre Winter Sugar for the cream and 3 tablespoons for sprinkling
- 100 g almond powder
- 70 g softened butter + 20 g for the finishing touch
- 1 egg yolk
To make this recipe :
- Beat the egg yolk, caster sugar and winter sugar in a bowl. Add 100 g of almond powder and the softened butter. Mix until smooth and creamy.
- Roll out the puff pastry in the tart tin and pour in the almond cream.
- Preheat oven to 180°C. Arrange thin slices of apple, brush with melted butter and sprinkle with winter sugar. Place in the oven and bake for 35 min.
Enjoy while still warm, with a scoop of vanilla ice cream, or caramel beurre salé for those with a sweet tooth?
