Lamb wrap & oriental salad


Perfect for lunch boxes and meals on-the-go, are so many new variations of wrap fillings – anything goes! In this recipe, designed in collaboration with the quadruple French barbecue champion*, we have created one garnished with lamb marinated in Incredible Lamb spices, oriental salad and a herb dressing. There’s a Middle Eastern vibe with the aniseed freshness of fennel and star anise, the slightly lemony power of cardamom and ginger, and the warmth of the cinnamon, nutmeg and cumin trio! Are you ready to try it?

Lamb wrap & oriental salad, the recipe

Preparation time: 30 minutes + two hours marinating time

Cooking time: one and a half hours

Can be cooked on the barbecue, grill, oven or in a pan

Ingredients for four people:

  • A 1kg leg of lamb
  • 20cl olive oil
  • 2 tablespoons of Incredible lamb spices
  • 4 to 8 fajitas or wraps depending on the size
  • 3 diced tomatoes
  • 100g of feta
  • 100g of stoned black olives
  • ½ a cucumber chopped into cubes

For the chive cream:

  • 1 small pot of cream cheese
  • 1 small pot of thick creme fraiche
  • Finely chopped chives
  • olive oil
  • a squeeze of lemon juice
  • Salt and pepper

Method:

Cut the lamb into thin slices and mix with the olive oil and  Incredible lamb spices. Leave to marinate for two hours in the fridge.

Cook the skewers for about one and a half hours at 180°C maximum (slow cooking).

While the meat is cooking, chop the tomatoes, feta and cucumber.

Prepare the chive cream by carefully mixing together all the ingredients.

Spread a line of chive cream on the wrap.

Add the slices of lamb, salad and black olives and roll up.

Tip: You can marinate and cook the leg of lamb whole and slice it after cooking. Instead of a wrap, you could use a pita, a yufka, or even half a round bread if you are really hungry, like a real kebab!

Which teas would go well with this dish?

For a resonant harmony, a green mint tea, such as Around The Medina or Casablanca dream is an obvious pairing. But a natural Chinese black tea with honeyed notes such as Honey Black or a spicy  Golden Yunnan is the ideal accompaniment to this intensely flavoured dish.
