Native to the Middle East, green anise has long been used in Egyptian and Roman medicine as a remedy for digestive disorders. Pliny the Elder even recommended it for insomnia, while Pythagoras attributed aphrodisiac virtues to it.
Who hasn't heard of aniseed candies from a famous Burgundy company? With its sweet, fresh flavors and floral notes, green anise (from the Apiaceae family) is recognized for its stimulating, carminative, digestive and antispasmodic properties. The ethanol contained in green anise gives it a much sweeter taste than sugar, which is why its seeds are ideal for gourmet end-of-meal preparations!
Use:
As an infusion, one teaspoon per cup infused for 5 to 10 minutes at 95°C. For babies, do not exceed 100 ml of infusion per day.
Cook in soups or cream soups with cauliflower, peas or fava beans.
Chew a spoonful of green aniseed to relieve bloating or freshen breath.
