Tips for preparing rooibos
An easy-to-make herbal tea that's delicious hot or cold
South Africa's national beverage, this organic rooibos, a red infusion with a sweet, sunny taste, transports you to the golden lands of the African tip.
This organic rooibos comes from the Cederberg region of South Africa's Western Cape. Commonly known as "red tea", our rooibos is a fair-trade product from the Wupperthal cooperative of small-scale producers.
Highly digestible, with no theine and very little tannin, rooibos, hot or iced, will delight young and old alike at any time of day.
Organic farming
We have always offered organically grown teas and herbal teas, and used natural, organic flavours. We go even further, demanding that our suppliers use certified organic flavor carriers and solvents. Certified since 1994.
Fair trade
A WFTO (World Fair Trade Organization) certified member, Les Jardins de Gaïa has been committed to fair trade since its creation: from the tea leaf to the cup, all our practices meet fair trade requirements. To find out more: www.wfto.com.
The technical moment
Harvesting takes place during the austral summer, between February and April, after the flowering period.
The stems are cut with a sickle and gathered into bundles. They are then chopped into 2 to 5 mm pieces before being spread out on the tea court, where they are watered abundantly and compressed to initiate the cellular activity linked to oxidation. The final stage is drying in the sun.
Tea and food pairings
For a successful pairing, rooibos should be overdosed or over-infused to bring out its natural woody and vanilla flavours with the food. As a result, it's a perfect match for "classic" breakfasts and snacks: toast, pastries, cakes or madeleines, but also most desserts, making it a perfect candidate for a "café gourmand" caffeine-free version.
