Kirishima, Kagoshima prefecture
Terroir
Kirishima is a town on the island of Kyūshū in southern Japan. The surrounding area is dominated by Mount Kirishima, an active volcano that dominates a mountainous landscape with a subtropical climate; summers are hot and humid and winters mild. Kirishima receives precipitation throughout the year, with a rainy season in summer. The soils are volcanic, due to the activity of the volcanoes in the Kirishima range. These fertile soils are well suited to tea production. Water resources are remarkable in the Kirishima region, fed by regular rainfall and groundwater. Several rivers cross the region, with the Amori River (天降川, Amorigawa) passing close to Kirishima. In addition, due to its volcanic activity, numerous lakes and craters have formed and become remarkable hydrological features of the region. Because of the altitude, the region's forests are home to a wide variety of sub-alpine and alpine trees, including Japanese cedars, oaks and maples.
Kirishima is famous for its Kirishima-Yaku National Park, which covers an area of around 548.32 square kilometers. A true biodiversity hotspot, the park is home to rare endemic species. Yakushima Island, a Unesco World Heritage site, is part of the park and is renowned for its population of Japanese monkeys and Sika deer, which live in harmony with Japanese cedars, some of which are over 7,000 years old.
Organic farming
We have always offered organically grown teas and herbal teas, and used natural, organic flavours. We go even further, demanding that our suppliers use certified organic flavor carriers and solvents. Certified since 1994.
Original tea
White, green, black and dark teas from China, India, Japan and elsewhere are all varieties from the same plant: the tea plant. Once plucked, the leaf is processed in different ways, undergoing numerous transformations. Depending on the terroir, the fineness of the leaf and the way it is processed, the result is an unlimited palette of tastes and vintages.
Marie's advice
Once infused, I use Gyokuro leaves in my other culinary preparations: pesto, herb butter, seasoning for soy sauce..

Tea and food pairings
Steamed green teas go particularly well with rice-based dishes, fish and shellfish. They can also be paired with many goat's cheeses and sheep's cheese. They also work wonders with pastries, traditionally mochi, but also chocolate, lemon, red fruit or exotic desserts.

Dégusté par petites tasses, ce thé fait mes délices. Au-delà de sa dominante herbacée, je crois déceler dans l'infusion riche en saveurs des tonalités fruitées, voire légèrement acidulées.

Quand j'ai ouvert l emballage carton je me suis tendu compte que le sachet plastique était totalemenr lacere sur les côtés...ce qui a eu pour effet fe disperser le thé partout.

Les thés japonais de ce grade sont comme des alicaments en effet ils sont très riches en chlorophylle et en acides aminés mais ils ont surtout une saveur unique, pour celui là c'est un thé d'exception qui pourra être infuser par deux fois.

Il m'est difficile de donner un avis sur un produit que je viens de recevoir, et que je ne mettrai pas en service avant 1 mois, car je ne recommande que lorsque j'ouvre le dernier paquet de mon stock. Toutefois, c'est a priori la même qualité que d'habitude et j'apprécie beaucoup ce Gyokuro.

Le sachet translucide est arrivée éventré et c'est répandu sur la table lorsque je l'ai sorti du paquet cartonné. Mauvaise surprise. Le thé est par contre d'une bonne qualité mais loin de la subtilité des thés Keiko

Très bon Gyokuro, que je trouve délicieux comme thé vert japonais. J'ai choisis celui-ci pour m'initier aux thé vert japonais, je ne suis pas déçus. Cependant, il y avait des poussières (de feuilles de thés !) présentes en nombre un peu important sur un sachet de 50g, c'est d'autant plus visible. Toutefois, je trouve ce thé très bon, et je le recommande. Je vais en remplir mes boites à thé vide.

J'en suis encore aux essais pour sa préparation qui est complexe (température d'eau faible et infusion courte). L'odeur des feuilles délivre délicatement un parfum de nature et un peu fruité, très léger. Au goût, très bon, légèrement sucré, une petite amertume (mais certainement dû à une infusion un peu plus longue). La liqueur a une superbe couleur laiteuse, ça donne envie de le savourer.
