Speculoos Cookies

Ingredients for approx. 60 cookies

  • 125 g Brown sugar & Speculoos
  • 250 g flour
  • 125 g soft butter
  • 1 egg
  • 2.5 g baking soda (1/2 level teaspoon)
  • Salt

Pour the Brown Sugar & Speculoos into a bowl. Add the butter and egg and mix until smooth. Gradually add flour, baking soda and salt. Mix well. Leave to rest in a cool place for 12 hours. Divide dough into 3 pieces. Roll out the dough to a thickness of 3mm. Cut into small rectangles or with a cookie cutter. Preheat oven to 200°C. Line the baking sheet with parchment paper. Place pastry rectangles. Bake for 10 minutes. Cool and enjoy!
