Discover the flavours of mace flower
The mace flower is not...a flower, but the husk of the nutmeg plant (Myristica fragrans). Bright red in color, it turns orange as it dries. Its flavor is finer and stronger than nutmeg, and can replace it in all its uses. Even tastier, our Demeter mace flower comes from biodynamic agriculture and originates from Sri Lanka. Two guarantees of excellence for this local product to be enjoyed all year round!
To be cooked reduced to a powder in meats, fish, vegetables or curries.

Salmon, broccoli & mace pie
Ingredients for 6 servings
- 300 g steamed broccoli or cauliflower, cut into pieces
- 400 g steamed salmon, cut into small pieces
- 1 carton of cooking soy cream
- 3 eggs
- puff pastry
- terra Madre mace flowers
- a few chopped fresh coriander leaves
- salt and pepper
Beat eggs, soy cream, chopped coriander and a pinch of finely crumbled mace. Season with salt and pepper. Roll out the pastry in a mould. Spread the salmon and broccoli over the tart base. Pour in the mixture. Place in the oven and bake for approx. 35 min. at 200°C (gas mark 7). Enjoy hot or cold.
