Vegetable tian

With the arrival of summer and the sunny weather, the barbecue season is upon us again.  This year, instead of serving the classic side dishes of raw vegetables, salads and potatoes, why not ring the changes with a delicious tian of seasonal vegetables to accompany the grilled meat? Take a look at our quick and easy recipe for this tasty Mediterranean dish. This colourful side dish will make your mouth water and is the prefect accompaniment to all types of grilled meat, whether it be beef, lamb, chicken, pork, fish, etc or a vegetarian alternative such as tofu, soya etc!

Recipe for vegetable tian with Terra Madre aromatic herbs

Preparation time: 15 minutes

Cooking time : 1 hour

Ingredients for two people:


Preheat the oven to 180°C. Cut the vegetables in half lengthwise. Then cut thin, equal-sized slices.

Arrange them in a gratin dish, alternating aborigine, courgette and tomato until the dish is full.

Crumble the feta over the vegetables.

Add a drizzle of olive oil, then add the aromatic herbs. Sprinkle on some salt and pepper.

Bake in the oven for an hour at 180°C and enjoy.

Tip: For vegans, the recipe can be made without cheese. You could also replace the feta with goat’s cheese, parmesan, mozzarella, ricotta… Similarly with the seasoning, you can spice up the dish by adding Espelette pepper, our ratatouille mix, or our Sunny Veggie spice rub that will caramelise when baked in the oven.

Eat as much as you like (especially if you grow your vegetables in your own vegetable garden)!
