Dhyāna Earth, our firmly-rooted, full-flavoured wu-long based meditation tea, inspired Vanessa from the cookery and vegan baking blog Deliacious and Esprit Veggie Magazine to work with us in coming up with a delicious recipe that puts this tea containing turmeric and ginger centre stage.

The highly original result will appeal to lovers of tea as well as fans of Japanese food.

 

Noodles in Dhyāna Earth wu long broth: the recipe

Preparation time: 15 minutes

Ingredients for two people

  • 2tsp of Dhyāna Earth wu long
  • 800ml of water
  • 100g soba noodles
  • 100g of leeks (the most tender part)
  • 200g of fresh spinach
  • 3 carrots
  • ½ an onion
  • 100g de mushrooms
  • Salt and Black peper from Malabar Terra Madre
  • 100g of natural tofu
  • 1 tablespoon of miso (of your choice, the sweetest one is the white)
  • 1cm of fresh ginger

Infuse the tea for 4 minutes at 95°C. Strain, then add the miso: stir to dissolve, then grate the ginger.

For the leeks, remove the green (which you can obviously use for a soup, a quiche or something else!). And keep only the heart and the most tender part. Slice the onion and cut the carrots into thin matchsticks or use a peeler to make thin strips. Wash and remove the stems from the spinach, and cut the mushrooms into slices.

Dissolve the miso in the broth, then add the onion, carrots, mushrooms, and soba noodles. Cut the tofu into small cubes and add to the broth. Cook the noodles for six minutes, after four minutes add the spinach leaves.

Add salt and pepper to taste.

When it’s ready to serve, add a drizzle of sesame oil and fresh coriander, if desired.
