Grilled aubergines with fresh goat’s cheese


How about putting vegetables centre stage on the barbecue for once? These grilled aubergines with fresh goat cheese and  Sunny Veggie spices are imbued with the invigorating flavours of galangal and ginger and the scent of the Garrigue (basil, thyme, savory and sage). The addition of goat cheese gives a delicious smoothness to this recipe, created in collaboration with quadruple French barbecue champion Anthony Le Brière. Cook them in the oven, on the grill or on the barbecue, the choice is yours!

Grilled aubergines with fresh goat’s cheese: the recipe

Preparation time: 10 minutes

Cooking time: 20 minutes

For cooking on the barbecue, grill, in the oven or in a pan

Ingredients four four people:

  • 4 large aubergines
  • 4 tomatoes
  • 400g of fresh goats cheese
  • 2 tablespoons of olive oil
  • 2 tablespoons of Sunny veggie mix
  • 1 clove of garlic

Recipe:

Wash the aubergines and slice them lengthways.

Drizzle with olive oil and place them on the grill flesh side down until you get a nice criss-crossed charring effect (about 10 minutes).

Place them on a baking sheet, flesh side up with the chopped garlic

Sprinkle on the Sunny veggie mix.

Place pieces of goats cheese and chopped tomatoes on the aubergines

Put the aubergines back on the barbecue with the garnish and cook for a further ten minutes

As an alternative: You can also grill courgette and aubergine slices (about 1cm thick). Once the typical criss-cross charring effect has been obtained, sprinkle them with Sunny veggie spices. Place them in a dish with oil and a clove of crushed garlic. Your antipasti is ready to eat. Enjoy! And for a cocktail dinner, serve on a slice of farmhouse or granary loaf.

Tip: You can serve the grilled aubergine with a few rocket leaves on top. Antipasti can be made ahead and stored for up to 3 days in the refrigerator.

Which teas go well with this dish?

For a chic dinner, a good Chinese green tea such as Long Jing Senteur céleste with toasted and mineral notes, for a more casual meal, a seasonal tea such as Summer Vibration (fruity and spicy). If you want something caffeine-free which the whole family can drink, the herbal tea Blushy Fruits is a delicious and colour coordinated accompaniment to these aubergines.
