Chocolate-topped creams with green tea

With their creamy texture, flavoured with the vegetal freshness of the precious Japanese Gyokuro green tea Shadow of the Phoenix, and with the added crunch of a chocolate topping, you’ll love everything about these little desserts made by Vanessa, alias Deliaciouss.

These little pots take moments to make, all you have to do is leave them in the fridge until you are ready to serve them, meaning you have plenty of time to spend with your guests!

Chocolate-topped creams with green tea, the recipe

Preparation time: 15 minutes

Allow to cool: three hours in a cold place + time for the chocolate to set

Vegan/gluten free

Ingredients for 4 little pots

  • 300g of almond milk
  • 200g of non-dairy cream
  • 35g of caster sugar
  • ¾ of a level teaspoon of agar-agar
  • 1 tablespoon of Shadow of the Phoenix
  • 100g of vegan milk chocolate (preferably for cooking)
  • 10g of neutral oil

The recipe

In a saucepan, mix together the almond milk and the cream. Infuse the Japanese green tea in a tea infuser. Bring to a simmer (do not boil) and infuse for 2-3 minutes. Remove the green tea, then add the agar-agar mixed with the sugar. Stir then bring to the boil and maintain it for one to two minutes for the agar-agar to set.

For the cream into four little pots (dessert-type jars) and refrigerate for three hours so the agar-agar sets.

Once the cream is cold, melt the milk chocolate, add the oil, then pour into the four Refrigerate for a few hours until the chocolate hardens.

Which tea would go well with this creamy dessert?

To keep things fresh and for a great match, an Shadow of the Phoenix Gyokuro is just the thing!

Enjoy!
